Local Cheese and Small-goods

After a great many years as chefs in England and other parts of Australia, Len and Wendy have moved to the Derwent Valley to pursue their own special interests.  Their Thistle Dew business includes:

Breeding certified Wessex Saddleback pigs (the Wagyu of pork), raising them kindly and free range then producing boutique ham, bacon and pork smallgoods.  Len’s traditional English pork sausages are a legend..   

Artisan Cheeses.  Wendy makes soft cheeses.  Double cream Brie, Camembert, Haloumi, Fetta and cream cheese ... Len specialises in the harder cheeses; Cheddar, Drunken Cow, Cheddar with chives or chilli

Since this is a genuinely local boutique operation smallgoods supplies are seasonal, not continuous.

At the moment we also have Thistle Dew Rhubarb Chutney, Pickled Cabbage, Bell peppers stuffed with fetta, damson plum sauce, chilli jelly
